Sweet Potato & Turkey Chowder
I'm really not much of a cook. I keep things pretty basic and often, I overcook the meat or undercook the veggies. I guess that's better than the opposite š¤£ But hey, I keep trying!!
I do like to eat. And I'm looking for recipes and ideas to steer me away from processed foods and just eat REAL FOOD. I have admittedly been abusing food for a couple of years now, since my dad passed suddenly. It's becoming obvious that my poor belly is waiving the white flag and begging for mercy. I had an honest chat with myself and myself and I decided that its time to get a grip! I asked the Lord for strength and wisdom and I'm implementing some small, practical changes.
One of them, cooking more with whole foods! I was really excited this morning to utilize the ginormous sweet potato that's been staring at me for weeks from my counter and the leftover turkey from Thanksgiving!
I looked up a few recipes but I never seem to follow them exactly so I'll just write down what I did because it turned out great!
1 large yellow onion (chopped)
4 cloves garlic (minced)
4 TBSP butter or bacon fat
(I used bacon fat)
1 big sweet potato, peeled and cubed (about 2/3lbs?)
1 can corn
2 cups cut fresh green beans
Leftover turkey chopped up
(I think I added about 3 lbs)
6 cups chicken stock
1 cup whole milk or 1/4 C heavy cream (I used heavy cream)
2 TBSP dried sage
Salt & pepper
Dash red pepper
First I sautƩed the garlic and onions in the bacon fat. Set aside.
In a soup pot, bring the chicken stock to boil, add sweet potatoes and boil until soft but not mushy.
Add the onions, garlic and can of corn, drained. Take half that mixture and add it to a blender and blend until smooth. Add back to soup pot.
Add the green beans and the chopped up turkey. Add sage, salt and pepper. Add red pepper if desired.
Let simmer for 10 minutes and add milk or cream. Serve hot!
This felt really good in my stomach and I'm glad I documented this recipe because I plan to come back to it over and over. I hope you enjoy!
